High-fiber Bread Quiche

Ingredients

4 slices high fiber bread
120 gr low-fat cottage cheese
2 onions
375 ml evaporated skim milk
3 eggs
2 bacon bits

Instructions

Line 25 cm pie pan with bread. Spread with cottage cheese and onions. Combine remaining ingredients except bacon bits, in blender. Cover; blend until smooth. Pour over onion layer. Sprinkle with bacon bits. Bake at 220ÂșC or 35-40 minutes. Cut into 8 wedges to serve.
