Hot & Sour Mushroom Soup

Ingredients

700 ml vegetable stock
5 ml nam prik pow sauce
1 lemon grass
3 kaffir lime leaves roughly torn three
4 gr sugar
30 ml lemon juice
20 gr oyster mushrooms

Instructions

(more if desired) -crushed to split open ---------------------------------TO GARNISH--------------------------------Coriander leaves In a large pan, bring the vegetable stock to the boil and stir in the Nam Prik Pow sauce. Add the remaining ingredients and simmer, stirring well until the mushrooms are just cooked but still al dente. Pour into a serving bowl and garnish with coriander leaves.
