Hotel Roanoke Peanut Soup

Ingredients

1 onion
1 gr celery salt
110 gr butter
3 gr salt
2 celery ribs
16 ml lemon juice
24 gr flour
100 gr peanuts
1,900 ml chicken broth
425 gr peanut butter

Instructions

Melt butter in sauce pan and add onion and celery. Saute for 5 minutes (do not brown). Add flour and mix well. Stir in chicken broth and simmer for 30 minutes. Remove from heat and strain. Add peanut butter, celery salt, salt, and lemon juice. Sprinkle ground peanuts on top before serving. Makes 20.5 c. servings.
