Huachinango

Ingredients

525 gr snapper
1 gr salt
1 achiote paste
2 gr oregano
5 garlic
6 peppercorns
60 ml seville orange juice
45 ml water
5 gr annato seed
10 ml orange juice
10 ml cider vinegar

Instructions
