Idaho's Pinto Bean Pie

Ingredients

240 gr mashed pinto beans
100 gr sugar
220 gr brown sugar
110 gr butter
2 eggs
1 unbaked pie shell

Instructions

* 1.5 cup cooked beans equals about 1 cup, mashed. This pie tastes like Pecan pie and can be served with whipped cream, non-dairy whipped topping or a scoop of ice cream. Blend sugars, eggs and butter until creamy. Add pinto beans and blend well. Pour into 23 cm unbaked shell. Bake at 190ºC for 20 minutes, then at 180ºC or an additional 25 minutes or until inserted knife comes out clean.
