Irish Sausages

Ingredients

400 gr pork
130 gr pork fat
1 gr mace
3 gr salt
1 gr pepper
1 gr sage
1 gr nutmeg
1 gr cayenne pepper

Instructions

Mince the meat and fat twice, then mix very well and season. Fry a teaspoon or so to check the flavor until you get it the way you like it. Add more herbs and spices as desired. Fill the skins.
