Italian Cheesecake

Ingredients

1 shortbread see recipe
1 use ameretto
400 gr riccotta cheese
4 eggs
130 gr sugar granulated
32 gr unbleached flour
60 ml ameretto liqueur
32 gr golden raisins
6 gr candied orange rind
6 gr candied lemon rind

Instructions

* Finely Chop the fruit rinds. Preheat the oven to 160ÂșC . Press the ricotta through a sieve. In a large mixing bowl, beat together the drained cheese, eggs, sugar, and flour. Stir in the liqueur, raisins and fruits. Pour the mixture into the prepared crust and bake for 1 hour. Remove the cake from the oven and cool to room temperature. Chill before serving.
