Jamaican Jungle Bread

Ingredients

190 gr flour
100 gr sugar
5 gr baking powder
5 gr baking soda
3 gr cinnamon
1 gr salt
40 gr flaked coconut
60 gr walnuts
3 bananas
240 gr pineapple
60 ml vegetable oil
2 eggs

Instructions

Mix flour, oats, sugar, baking powder, baking soda, cinnamon, salt, coconut and nuts in a large bowl.

Mix bananas, pineapple, oil and eggs in a medium bowl. Add all to large bowl and stir, but not too much.

Bake on a greased pan at 180ÂșC or 50 minutes.

For the glaze, mix half cup of confectioners sugar with 1 Tb of butter and add either half ts coconut or vanilla extract. Add 2 ts of milk.

Pour this glaze over the bread.

Makes one loaf.
