Jim Echols' Cajun Spice

Ingredients

2 gr paprika
3 gr salt
2 gr onion powder
2 gr cayenne powder
3 gr garlic powder
3 gr chilies
5 gr ginger powder
2 gr pepper
2 gr black pepper
1 gr thyme
1 gr oregano

Instructions

Mix all ingredients together in a small bowl. Store in an airtight container. Terry says, "One of the guides, Jim Echols, gave me this recipe. I would prepare monster-sized batches of it for him and the other guides to use in preparing blackened (cajun) trout. -A special surprise for guests at shore lunches.
