Jing Char Siu Bau

Ingredients

16 ml oyster sauce
10 ml ketchup
1 gr pepper
70 ml chicken broth
1 1/2 dark soy
9 gr sugar
6 gr cornstarch
3/4 char siu
16 ml peanut oil
60 gr onion
7 ml wine
2 ml sesame oil
4 hrs

Instructions

Roll 1 recipe Steamed Bun Dough into a 41 cm long roll and cut into 16 1 inch pieces. Roll each into a ball and cover with damp cloth. Work dough ball into a hemisphere. Put 2 Tbs. filling mix into formed hemisphere in palm of one hand. Work around the hemisphere, pleating and closing the dough until filling is completely covered. Place sealed buns, sealed end down, on 6 cm X 6 cm squares of wax paper. Place in steamer at least 5 cm apart, steam for 15 20 minutes. Serve immediately.
