Jo Parodi's Pumpkin Parfait Pie

Ingredients

100 gr sugar
22 gr gelatin
16 gr coffee
2 gr ginger
1 gr cinnamon
1 gr nutmeg
240 ml water
475 ml ice cream
250 gr pumpkin
1 graham cracker crust pie

Instructions

(9 inch) Blend brown sugar, gelatin, coffee powder and spices in mixing bowl. Add boiling water and stir to dissolve. Add ice cream by spoonfuls, stirring until smooth. Stir in pumpkin. Chill until mixture mounds when spooned, about 5 minutes. Spoon into crust and chill until firm.
