Joanne Woodward Zucchini Bread

Ingredients

375 gr flour
5 gr baking soda
5 gr baking powder
3 gr cinnamon
3 gr salt
3 eggs
200 gr sugar
240 ml oil
4 gr vanilla
260 gr zucchini

Instructions

Mix flour, soda, baking powder, cinnamon, and salt together, beat eggs until foamy, add sugar, oil, vanilla and sifted dry ingredients a little at a time. The mixture will be thick. Add the zucchini; the mixture will be gummy. Pour into 2 well greased 8x4x2 loaf pans and bake at 180ÂșC or 1 hour. check at 50 minutes and if a toothpick comes out clean it is done. May be frozen ----
