Lemon Lassie

Ingredients

110 gr butter
200 gr sugar
3 gr cinnamon
2 gr baking soda
60 ml molasses
1 egg
280 gr all purpose flour
3 eggs yolks
2 gr lemon peel
60 ml lemon juice
230 gr flake coconut
200 gr sugar
1 gr salt
16 ml water in a saucepan

6 rectangle
1 wide

Instructions

strip lengthwise down center of each rectangle. Fold each long side of dough over filing, overlapping slightly in center; seal. Place seam-side down on working surface. Flatten slightly. Cut crosswise into 4 cm bars. Place bars 4 cm apart on ungreased cookie sheets. Bake in a 180ÂșC F oven about dozen minutes or till set. Cool cookies on wire racks. If desired, drizzle with melted candy coating. Makes 40.
