Lemony Cheesecake With Fresh Fruit

Ingredients

26 gr graham cracker crumbs
450 ml fat-free cream cheese
1 package eagle brand fat free
4 egg whites
1 egg
80 ml realemon lemon juice from
4 gr vanilla extract
40 gr unsifted flour
1 assorted fruit

Instructions

Preheat oven to 150ºC . Spray bottom of 20 cm springform pan with cooking spray; sprinkle crumbs on bottom of pan. In mixer bowl, beat cheese until fluffy. Gradually beat in Eagle Brand until smooth. Add egg whites, egg, ReaLemon and vanilla; mix well. Stir in flour. Pour into prepared pan. Bake 50 to 55 minutes or until center is set. Cool. Chill. Serve with fruit. Refrigerate leftovers.
