Lentils With Summer Vegetables

Ingredients

2 lentils
1 onion
2 carrots
2 celery
1 zucchini
1 1/2 savory
1 bay leaf
1,200 ml water

Instructions

Put everything in a large pot, bring to a boil, reduce heat, cover and simmer about 30-40 minutes. Remove bay leaf. Serve over brown rice (or maybe potatoes). Makes 4 reasonably sized servings.

NOTE: Use which ever vegetables you have on hand. Vary to suit yourself. leeks are great in this. If you'd want this to be more soup-like, add more water and a can of tomatoes, pureed.
