Low Fat Vegetarian Chili

Ingredients

5 ml olive oil
2 onions
2 garlic
1,000 gr tomatoes
950 gr kidney beans
350 gr chickpeas
150 gr celery
1 green pepper
3 lime
30 ml lemon juice
8 gr chili powder
3 gr oregano
3 gr cumin
1 gr cinnamon
350 ml beer
1 peanuts
1 cheddar cheese

Instructions

In a large pot, heat oil and saute onions and garlic until soft. Add all ingredients except beer, peanuts and cheddar cheese. Cover and simmer 1.5 hours. Add beer and simmer uncovered for 30 minutes. Add handful of peanuts and sprinkle cheese on each serving.
