Melt In Your Mouth Blueberry Cake

Ingredients

2 egg whites
200 gr sugar
65 gr butter
4 gr vanilla extract
2 egg yolks
190 gr flour
5 gr baking powder
80 ml milk
1 1/2 blueberries

Instructions

Recipe by: Copper Light In Port Clyde, Maine Pat beat the egg whites until stiff. Add quarter C sugar. In a separate bowl cream the butter, add salt and vanilla, add the remaining sugar and egg yolks. Beat until light and fluffy. mix the flour & baking powder, add alternately with the milk to the creamed mixture. Fold in the egg white mixture and the blueberries. Grease a 8 x 20 cm pan. Pour in the batter and sprinkle the top with granulated sugar. Bake in a 350 oven for about 50 minutes or until it tests done. Place the pan in the upper one third of the oven Serves 9 ----
