Myong's Kim Chee

Ingredients

1 head bok choi
1 slice daikon radishes
2 carrots
8 slices garlic
2 garlic
200 gr sea salt
65 gr flaked peppers
140 gr coarsely scallions
475 ml water
475 ml rice vinegar
24 gr sesame seeds

Instructions

Mix all dry ingredients together. Place in a large crockery or glass container that can be sealed airtight. Pour liquids over them, vinegar first. If the veggies are not covered by the liquid add more vinegar...NOT waterSeal jar and place into refrigerator for 2-12 weeks. *** NOTE *** The refrigeration is necessary to prevent spoilage.
