Northwest Cioppino

Ingredients

some garlic
10 ml olive oil
120 gr onions thinly
140 gr green pepper thinly
95 gr carrot thinly
50 gr celery thinly
230 gr tomatoes
240 ml tomato sauce
240 ml water
325 ml wine
2 packages chicken broth
1 bay leaf
1 gr oregano
1 gr salt
2 gr pepper
200 gr fish fillets

Instructions

In 3.5 or 4 litre saucepan heat oil; add onions, green pepper, carrot, celery, and garlic and saute, stirring frequently, until vegetables are tender, about 2 minutes. Add remaining ingredients except fish and bring to a boil. Reduce heat and let simmer until flavors are blended, about 20 minutes; stir in fish and cook until fish flakes easily when tested with fork, 7-10 minutes. Remove bay leaf before serving. 1 serving!2 calories.
