Oatmeal Raisin Cookies Lowfat

Ingredients

130 gr flour
2 gr baking soda
160 gr quick oats
1 gr cinnamon
100 gr sugar
2 egg whites
1 gr salt
110 gr karo syrup
2 gr baking powder
4 gr vanilla
85 gr raisins

Instructions

Preheat oven to 375 degrees. Spray cookie sheets with cooking spray. In large bowl combine dry ingredients. Stir in egg whites, corn syrup and vanilla until well mixed, add raisins. (Batter will be stiff.) Drop by rounded teaspoons onto prepared cookie sheets. Bake 10 minutes or until firm. Do not overbake. Remove on wire rack to cool. Makes 2.5 dozen cookies.

Variation: use molassas for half of the syrup and add quarter teaspoon nutmeg and quarter teaspoon ginger, it makes a spicy cookie.
