Original San Antone Chili

Ingredients

some garlic
1/2 suet
900 gr beef shoulder
260 gr pork shoulder
95 gr flour
3 gr salt
1 gr pepper
3 onions
1,400 ml beef stock
4 ancho peppers
1 pastilla pepper
1 casbel pepper
6 gr cumin seeds

Instructions

Fat grams per serving: Approx. Cook Time: 4 hrs Fry suet in a large heavy kettle. Remove suet and discard. Cut meat into 1 cm cubes. Combine flour, salt and pepper in brown papper bag. Add meat and shake to coat. save remaining flour. Sear floured meat in hot fat, stirring to prevent sticking. Add onions and garlic; cook and stir until soft.
