Papas A La Arequipena

Ingredients

5 chilies
3/8 annato seed
475 ml oil
2 slices eggs
1 slice corn
24 gr cilantro
850 gr potatoes
1 lemon
1 lime
1 garlic
6 gr salt
350 gr cheese
475 ml warm water
60 ml achiote oil mashed potatoes
60 gr walnuts
65 gr reserved pepper soaking liquid
18 gr sal process until smooth
1/2 crumbled cheese
1 1/2 balls

Instructions

leaves, spooning a little sauce on top. Garnish with eggs, corn, coriander and olives. Serve at room temperature.
