Passover Honey Cake

Ingredients

240 ml honey
60 ml orange juice
1 orange
3 eggs
5 ml vegetable oil
100 gr sugar
2 gr ginger
1 3/4 matzo meal
1 gr salt
5 gr coffee
3 gr cinnamon

Instructions

Heat honey to boil; add orange juice and rind. Cool. Beat egg yolks. Add oil and sugar, sift together matzo meal and dry ingredients. Add dry ingredients and honey to egg yolks. Fold in stiffly beaten egg whites. Bake in one oblong or 2 loaf pans. Line pan with wax paper. Bake @ 150ÂșC or 50 minutes.
