Peanut Butter Chocolate Balls

Ingredients

160 gr graham cracker crumbs
120 gr flaked coconut
300 gr peanuts
230 gr butter
375 gr powdered sugar
325 gr crunchy peanut butter
4 gr vanilla extract
700 gr semisweet chocolate morsels
36 gr shortening
1 recipe by southern living

Instructions

Combine first 7 ingredients, stirring well. Shape mixture into 3 cm balls. Combine chocolate morsels and shortening in top of a double boiler; bring water to a boil. Reduce heat to low; cook until chocolate melts. Dip each peanut butter ball into chocolate mixture. Place on wax paper to MICROWAVE DIRECTIONS: Combine first 7 ingredients, stirring well. Shape mixture into 3 cm balls. Combine chocolate morsels and shortening in a 1- 0.5-quart bowl; microwave at MEDIUM (50% power) for 5 to 6 minutes or until chocolate is softened; stir well. Dip each peanut butter ball into chocolate mixture. Place on wax paper to cool. Store in refrigerator. NOTE: Peanut Butter Chocolate Balls may be frozen in an airtight container for later use. Remove balls from freezer 1 hour before serving. ----
