Peking Duck 1

Ingredients

2,400 gr long island duck
1,200 ml water
3 maltose
16 ml vinegar
16 ml sherry
16 ml sesame oil
14 gr sugar
16 ml soy sauce
75 ml hoisin sauce
12 chinese pancakes
1 just before
1/4 scallions
2 cucumbers

Instructions

towards the head. Slice thinly. Use only the outer slices-those which have skin. Slice both breasts. Slice the legs, cutting from the joint to the end of the leg. Discard remaining meat (without skin) or use for another dish. (See part -20ÂșC or more)
