Picadillo Stuffing

Ingredients

1 onion
1 green pepper
3 garlic
60 ml olive oil
1 tomato
450 gr beef
34 gr spanish olives w
40 gr dark raisins
18 gr capers
240 gr rice
850 ml chicken stock
32 gr slivered almonds
60 ml dry spanish sherry

Instructions

Salt and pepper to taste In a large skillet saute onion, pepper and garlic in olive oil. Add tomato and cook slowly until well blended. Brown meat in same skillet and cook slowly with olives, raisins, and capers. Meanwhile, cook rice in stock until done. Mix rice with other ingredients to form a moist,but not wet, stuffing. Season with salt and pepper. Stuffs a 12-15 pound turkey.
