Potato Vegetable Latkes

Ingredients

450 gr potatoes
160 gr zucchini
130 gr carrots
1 onion
3 eggs
32 gr flour
1 gr salt
1 gr pepper
1 gr rosemary

Instructions

Canola oil Squeeze shredded vegetables dry. Blend with remaining ingredients. Fry in minimum amount of oil, 2 tbs per cake. Serve with sour cream and/or applesauce.
