Powerhouse Muffins

Ingredients

12 bake
130 gr all purpose flour
65 gr sugar
9 gr baking powder
2 gr cinnamon
1 1/2 all-bran cereal
300 ml apple juice
60 ml vegetable oil
95 gr apple
140 gr apricots
40 gr walnuts

Instructions

----------------------------------Topping----------------------------------1 tb margarine or butter; melted 1 tb sugar 0.125 ts ground cinnamon Preheat oven to 200ºC . Place dozen bake cups in a muffin pan or -10ºC oil cups on a cookie sheet; set aside. In large bowl, combine bran cereal and apple juice; stir well. Let stand 4-5 min. for cereal to soften. Add oil, apple apricots and walnuts. Add dry ingredients to mixture, stirring just until ingredients are moistened. Fill bake cups with muffin batter. Bake until wooden toothpick inserted in center comes out clean, 18-22 min. On a sheet of wax paper, combine 1 tablespoon sugar and 0.125 tsp. cinnamon. Brush hot muffins with 1 tablespoon melted butter; sprinkle with sugar mixture. Remove muffins from muffin pan or cookie sheet.
