Prize Winning Ham And Lentil Soup

Ingredients

1 meaty ham bone
1,400 ml water
1 1/4 lentils
1 package tomatoes
3 slices carrots
2 slices celery ribs
30 gr green onions
1 gr salt
2 gr garlic powder
1 gr oregano
1 gr pepper
190 gr bulk pork sausage
3 gr parsley

Instructions

In a Dutch oven, bring ham bone and water to a boil. Reduce heat; cover and simmer for 1.5 hours. Remove ham bone. To broth, add lentils, tomatoes, carrots, celery, onions and seasonings; bring to a boil. Reduce heat; cover and simmer for 30-40 minutes or until lentils and vegetables are tender. Meanwhile, remove ham from bone; coarsely chop. Add ham, sausage and parsely to soup; heat through.
