Pumpkin Muffins

Ingredients

325 gr am wheat pastry flour
65 gr am wheat bran
14 gr non-alum baking powder
3 gr cinnamon
1 gr nutmeg
3 gr sea salt
65 gr nuts
2 eggs
60 ml am unrefined sunflower oil
120 ml honey
500 gr pumpkin puree
2 ne
2 gr orange rind
170 gr raisins
75 gr pitted dates

Instructions

Combine dry ingredients. In a separate bowl beat eggs, add oil, honey and pumpkin. Combine the mixtures, then add the orange rind, raisins and dates. Stir till all dry ingredients are moistened. Fill oiled muffin tins two third full. Bake at 190ÂșC . for 30 minutes for large muffins or 20 minutes for mini-muffins. Allow to cool 5 minutes before removing from the pan. (Yield-24 large or 48 mini-muffins)
