Pumpkin Whoopie Pies

Ingredients

450 gr brown sugar
240 ml oil
375 gr pumpkin
2 eggs
375 gr flour
3 gr salt
5 gr baking powder
5 gr baking soda
4 gr vanilla
12 gr cinnamon
7 gr ginger
575 gr shortening
800 gr powdered sugar
16 ml milk
4 egg whites
32 gr flour
26 gr vanilla

Instructions

and oil. Add pumpkin and eggs and mix well. Combine all remaining ingredients and mix into creamed mixture. Drop by large tablespoonsful onto greased baking sheet. Bake at 180ÂșC or 10 dozen minutes. To prepare filling combine all ingredients and mix well. Make whoopie pies by spreading filling on flat side of one cookie and making it sandwich with another cookie. Store in airtight container. ----
