Rainbow Blossom's Vegan Banana Muffins

Ingredients

130 gr cornmeal
65 gr soy flour
3 gr salt
5 gr baking powder
2 gr baking soda
3 gr cinnamon
40 gr almonds
30 ml canola oil
240 ml soy milk
250 gr ripe banana
4 gr vanilla
1 gr ener egg replacer
60 ml water

Instructions

Put cornmeal, rice and soy flours, salt, baking powder, baking soda, cinnamon and almonds in a large bowl. Toss to combine. In a separate bowl, combine oil, soy milk, mashed banana and vanilla. Whisk egg replacer with water. Stir into oil mixture. Pour wet ingredients into dry ingredients. Stir quickly and gently until just blended. Divide batter equally into lightly greased muffin tins. Bake at 190ÂșC . for 25 to 30 minutes.
