Refrigerator Cheesecake

Ingredients

190 gr graham crackers
50 gr sugar
110 gr melted butter
3 gr cinnamon
200 gr sugar
1 gr salt
3 eggs
120 ml lemon juice
32 gr cornstarch
180 gr cottage cheese
1 lemon
2 gr vanilla

Instructions

1. Mix together crushed graham crackers, sugar, melted butter and cinnamon. Pr ess on the bottom and sides of a 25 cm springform pan.

2. Combine the sugar, salt and egg yolks and beat until light.

3. Mix together the lemon juice and cornstarch. Add to the egg mixture.

4. Add the cheese and cook in the top of a double boiler over simmering water until thick, stirring constantly. Remove from heat and cool.

5. Add the lemon rind and vanilla; mix well.

6. Beat the egg whites until stiff and gently fold into the mixture.

7. Pour into the crust and place in the refrigerator until firm. Serves 8-10 .
