Rich Boiled Fruit Cake From Mary Killen

Ingredients

120 gr flour
160 gr margarine
140 gr sugar
55 gr currants
80 gr raisins
4 sultanas
2 gr mixed spices
5 gr baking soda
1 gr ginger
240 ml water
2 eggs

Instructions

Place margarine, sugar, fruit and water into saucepan. Bring to a boil and simmer for approximately 10 minutes. Leave to cool. Sieve flour, spices, and baking soda and add to contents of saucepan. Beat eggs into mixture and pour into a greased and lined 18 cm square baking pan. Bake at 160C (320F, gas mark 3) for 75 minutes.
