Senegal Stew With Millet

Ingredients

30 ml vegetable oil
270 gr cabbage
120 gr onion
2 garlic
1 gr pepper
1 gr curry powder
1 gr thyme
270 gr tomatoes
240 ml vegetable broth
28 gr peanut butter
2 sweet potato
1 1/2 rutabaga
130 gr carrots
200 gr chickpeas
2 millet

Instructions

In a 3 litre saucepan, heat the oil over medium-high heat. Add the cabbage,onion,and garlic and cook, stirring until the cabbage is softened. Stir in the red pepper, curry powder and thyme. Stir in the tomatoes, breaking them up with the back of the spoon. Add the broth and peanut butter and stir until completely smooth. Add the potato, rutabaga, carrot and chickpeas. Bring to a boil, reduce the heat and simmer, uncovered, 35 minutes. Serve over millet. ~-
