Spiced Oil

Ingredients

1/2 carrot
1 lime
1 lemon
1 bay leaf
4 basil
1 thyme
3 garlic
6 gr pepper
1 bell pepper
850 ml oil
1 rosemary
1 tomato
2 shallots
1 scallion

Instructions

Place the vegetables and spices in a jar and add the oil. Set aside for at least 4 days before using. Can be stored for 2 weeks, or strain and store indefinitely.

For a fast pasta dish, toss quarter cup of this herbed oil with some fresh pasta and steamed vegetables, or use it in summer pasta salads.
