Strawberry Ginger Soup

Ingredients

600 ml strawberry juice see notes
1 ripe banana
250 gr sparkling apple cider
230 gr champagne
60 ml yogurt
260 gr mixed blueberries
1 mint sprigs for

Instructions

Combine juices and banana in a blender (or use an immersion blender) and blend until smooth. Add sparkling cider and ladle into chilled soup bowls. Serve with a dollop of yogurt, a scattering of fresh berries and a mint sprig or two.
