Sunshine Chicken

Ingredients

14 gr curry powder see note
3 gr salt
1 gr peppercorns
6 chicken breasts
350 ml orange juice
120 gr rice converted
180 ml water
14 gr brown sugar
5 ml dry mustard

Instructions

Combine curry powder, half tsp salt and pepper. Rub into chicken pieces and set aside. In a 25 cm skillet, combine Orange Juice, rice water, sugar, mustard and remaining salt. Mix well. Arrange chicken over rice. Bring to a boil an then cover. Simmer 20 minutes. Remove from heat and let stand until liquid is absorbed. About 5 minutes. Sprinkle with parsley before serving.
