Sweet Onion Muffins

Ingredients

1 egg
50 gr sugar
80 ml vegetable oil
60 gr sweet onions
180 ml milk
85 gr sharp cheddar cheese
130 gr self rising flour
45 gr pecans
160 gr rolled oats

Instructions

In a large bowl whisk together the egg, oil and milk. Add flour, oats, and sugar. Stir the mixture until it is just combined. Fold in the onion, cheese, and pecans. Spoon mixture onto buttered muffin tins, and bake in preheated 400 degree oven for 15 to 20 minutes, or until golden. Turn the muffins out onto racks.
