Teri's Tortilla Veggie Soup
Ingredients
2 cans stewed ripe tomatoes extra rotel
1 package black beans
1 package corn
1 package garbanzo beans
3 chicken breast
1 zucchini squash cubed
1 squash cubed
3 slices stalks celery
2 cans chicken broth fat free
5 garlic
1 package green beans
1 package green chiles
475 ml water if needed
130 gr baby carrots
7 gr fat-free cheddar cheese
2 gr tortilla chips
16 ml fat-free sour cream
Instructions
Put all ingredients into crock pot. Turn on low (or auto) and leave all day. Come home to a hot bowl of soup. I serve it over some low fat cheese and add some crumbled WOW chips (fat free). Also a dollop of fat free sour cream is great and cuts the heat if it's too hot for you. Warning if you use the extra hot Rotel, it will be SPICY!
