Teriyaki Tofu Brochettes

Ingredients

75 gr tamari
80 gr mirin
80 ml pineapple juice
30 ml sesame oil
16 ml honey
1 gr garlic powder
1 gr ginger
1 gr pepper flakes
475 gr yaki
500 gr pineapple
1 bell pepper
1 onion
2 zucchini
80 gr button mushrooms

Instructions

Combine marinade ingredients in a shallow glass baking dish. Add tofu and pineapple chunks and let marinate at room temperature one hour. Stir occasionally to coat tofu with marinade. Prepare grill. Thread skewers with tofu, pineapple, and vegetables leaving small spaces between pieces of food to allow for faster, more even cooking. Brush brochettes with some of the marinade. When coals are ready, place skewers on grill and cook 10 to 15 minutes, turning once. Brush brochettes with more marinade as they cook. Brochettes are ready when edges become crisp and begin to blacken.
