Tesque Pumpkin Cookies

Ingredients

400 gr sugar
375 gr vegetable shortening
500 gr pumpkin
120 gr tofu
9 gr vanilla extract
500 gr all purpose flour
9 gr baking soda
3 gr salt
2 gr nutmeg
1 gr allspice
325 gr raisins
120 gr walnuts

Instructions

Preheat the oven to 180ÂșC . Grease a large cookie sheet. In a large bowl, cream together the sugar and shortening. Add the pumpkin, tofu, and vanilla and beat until smooth. In a separate bowl, combine the flour, baking soda, salt, nutmeg and allspice. Slowly add the dry ingredients to the pumpkin mixture, small amounts at a time, until completely mi8xed together. Stir in the raisins and walnuts. Drop tablespoonfuls of the dough roughly 5 cm apart on the cookie sheet. Bake dozen to 15 minutes, until golden brown.
