Thai Pasta And Seafood Salad

Ingredients

55 gr smooth
60 ml water
80 ml cider vinegar
30 ml soy sauce
6 gr ginger root
3 gr garlic
900 gr shrimp
3 slices kirby pickling cucumbers
2 slices bell peppers
18 gr cilantro leaves
1/2 scallions

Instructions

Peanut-Ginger Dressing: Whisk peanut butter and hot water in a large bowl until smooth. Whisk in vinegar, soy sauce, sugar, gingerroot and garlic. Add remaining ingredients. Toss to mix. Makes about dozen cups/6 servings. For a spicier version, sprinkle with crushed red pepper.
