28 gr clarified butter
30 ml cognac
110 gr clarified butter in skillet over high hea working in batches if necessary
120 ml cognac
240 ml cream to skillet
110 gr lobster butter a little at a time
Instructions
Place lobster pieces between pieces of lotte. Nap with sauce; garnish with parsley and serve immediately.
