Traditional Mincemeat 14

Ingredients

900 gr beef
450 gr beef suet
650 gr apples
2 seedless grapes
1 1/2 currents
3/4 candied citron
75 gr candied lemon peel
850 gr brown sugar
8 gr salt
240 ml molasses
750 gr apple cider
2 gr mace
8 gr cinnamon
6 gr allspice
5 gr nutmeg
230 gr walnuts
60 ml lemon juice
230 gr brandy

Instructions

Place meat in a very large saucepan with just enough water to cover & simmer for half hour. Drain meat & return to pan. Add all remaining ingredients, except lemon juice & brandy. Bring mixture to a boil & reduce heat & simmer for 1.5 hours, stirring occassionally. Stir in lemon juice & brandy. Ladle mincemeat into sterilized jars & seal, cool & store. Allow the mincemeat to mature for at least 6 weeks before using.
