Tropical Treats

Ingredients

250 gr all purpose flour
5 gr baking soda
1 gr salt
230 ml pineapple in juice
45 gr papaya
85 gr pineapple
55 gr golden raisins
1 egg
220 gr brown sugar
60 ml vegetable oil
2 gr orange rind
20 gr unsweetened coconut

Instructions

-shredded Recipe by: The New Dr. Cookie Cookbook Preheat oven to 350 degrees; coat 2 cookie sheets with nonstick cooking spray. Whisk together the flour, baking soda and salt; set aside. Stir together the canned pineapple, papaya, dried pineapple and raisins; set aside. Beat the egg, brown sugar, oil and orange rind with an electric mixer until smooth. Add the flour mixture and beat again. Add the fruit mixture and beat until well mixed. Stir the coconut into the batter. Drop by rounded teaspoonfuls about 5 cm apart onto the cookie sheets. Bake for 10 to dozen minutes, or until the cookies are lightly browned. Cool on wire racks. Repeat until all of the cookies are baked. Penny Halsey (ATBN65B). Nutrition Analysis: 56 calories,
