Upstate Minestrone Soup

Ingredients

260 gr italian sweet sausage
14 gr olive
120 gr onion
1 clove garlic
130 gr carrots
1 gr crumbled basil
2 zucchini
375 gr italian pear
300 gr beef boullion
3 beef boullion
350 ml water
180 gr cabbage
3 gr salt
1 gr pepper
500 gr great northern beans

Instructions

Undrained Small amount chopped parsley Slice sausage crosswise about 1 cm thick; brown in oil in deep saucepan or Dutch oven. Add onion, garlic, carrots and basil; cook for 5 minutes. Add zucchini, tomatoes with liquid, boullion, cabbage, salt and pepper. Bring soup to boil; reduce heat and simmer, covered, for 1 hour. Add beans with liquid; cook another 20 minutes. Garnish with parsley.
