Vegetarian Red Bean Stew

Ingredients

525 gr beans washed sorted
80 ml olive oil
1 1/2 onions
6 gr salt
1 gr black pepper
4 garlic
200 gr green chili peppers mild fire
2 parsnips peel
2 carrots peel
2 celery ribs
1 zucchini trimmed
1 squash trimmed
1,900 ml water
3 gr salt
3 gr sal simmer until all the vegetables are soft
