Velvet Pumpkin Cake

Ingredients

325 gr baking powder
100 gr sugar
190 gr pumpkin pie mix
1 egg
24 gr shortening
4 gr vanilla

Instructions

Blend all ingredients except the whipped cream in a large mixer bowl on low speed half min, scraping bowl frequently. Beat 4 mins. medium speed. Pour batter into greased and flours square pan, 8 by 8 by 5 cm or round layer pan, 9 by 4 cm. Bake @ 350 deg. for 35-40 mins or until wooden pick inserted in center comes out clean. Serve warm with whipped cream. Says it makes a one layer beauty, served warm in a snowdrift of whipped cream.
