Very Veggie Chili

Ingredients

1 veggie chili
1 recipe by bon appetit
1 categories chili main dishes vegetables
45 ml vegetable oil
3 stalks celery
1 onion
1 green pepper choppped
8 garlic
425 gr cans mexican-style stewed tomatoes
450 gr cans pinto beans
15 hominy
200 gr kernel corn
70 gr green chilis
140 gr cilantro
34 gr chili powder
6 gr cumin

Instructions

Heat oil in heavy Dutch oven over high heat. Saute celery, onion, bell pepper & garlic until they begin to soften...about 8 minutes. Add all remaining ingredients except cilantro & simmer, about 35 minutes. During last 10 minutes, add cilantro.
